How are you filling your coolant system? I fill mine up from the bolt hole in the top of the rad. You will need a small enough diameter pipe in a bucket full of coolant/water sat on your roof. Siphon it into the rad. This is what Rich at RJES advises i believe in his filling procedure on the RJES site.
Do this with your heaters open and header tank cap off until coolant starts to overflow. Stick cap back on tight and system will continue to fill with no air locks. When rad starts to overflow system is full. Now fill your expansion tank to max and connect to the header tank cap. Job done sorted and unlikely you will have to top up. Go for a drive with your siphon pipe and a big 5l bottle of coolant/water just in case. Let system cool and check level in expansion tank as it's probably dropped. Keep topping up until it keeps it's level.
Bear in mind if any of your hose clips are loose your system will not pressurise. They may not appear to leak coolant from experience but they can take on air. When your system pressurises this raises the boiling point. If it doesn't pressurise your coolant will boil and will be lost via steam. Hence your level will drop and you will over heat. Check all fittings.
Don't want to worry you but keep an eye on your system and if it continues to cause you problems beware 2.5 quad cam (not sure if this is what you have) are notorious for head gasket trouble. Problem is easily sorted with the right gaskets and unlikely to return if done properly. I have experienced this 1st hand unfortunately.

If you have ruled out leaks, do you have the expansion bottle plumbed in to the pipe fitting on the top of the header tank cap? If not, losing coolant would be expected.
If you do, and the expansion bottle is filled, the valve in your header tank cap may have failed open (they can fail closed too), preventing the system pressurising as it gets hot. If this is the cause, your engine will boil very easily as the lack of pressurisation will cause the coolant to boil at too low a temperature. _________________ Regards,
